Birthday Cake Pancakes

I feel spoiled beyond belief. This weekend was my birthday weekend and on Saturday I woke up to Birthday Cake Pancakes that Nick made for me! I’m such a birthday person. My favorite song ever is Birthday by Katy Perry, and my favorite flavor of anything is birthday cake flavor so these were just perfect! They tasted just like cake…it was seriously delicious! He had found a recipe on Pinterest and then manipulated it a bit. They are tough to cook. The batter doesn’t stick to itself well so he had a little trial and error with the first few pancakes he cooked but the batter made so so many that he was able to get a lot of practice. I hope someone else out there who loves birthday cake as much as I do has fun with these. Since I’m such a birthday person I’m totally going to make a big deal about our kids birthdays some day and this recipe is perfect for that. 😉

Ingredients: 

1 1/3 cup white flour

2 teaspoons baking powder

2 tablespoons sugar

1/2 teaspoon salt

1 box Pillsbury Funfetti cake mix

1/3 cup canola oil

3 eggs

2 2/3 cups milk

as many freaking sprinkles as you desire

Frosting:

1 cup powdered sugar

1/4 cup whipping cream

Instructions:

In a large bowl, mix dry ingredients.

Add wet ingredients

Mix together

Heat non-stick griddle to 275 degrees

Pour batter on to griddle and flip when lightly golden
